Mix sugar, yeast, and water together in a mixing bowl. Allow the yeast to bloom until the foam touches the sides of the bowl. At this point you are to secure your bowl in the mixer, and attach the dough hook. On the lowest speed, slowly add in the flour, salt, and olive oil. I like to mix the flour and salt together beforehand so I only have to worry about two different things.
Once everything is combined, turn your mixer up to medium speed and keep it spinning for 5-10 minutes, which is, incidentally, enough time to prepare a greased bowl and a wet towel for letting the dough rise. I don't really care what you use to grease the bowl with, I use a cooking spray, but as long as the bowl is greased I don't really care.
Once you have this ready, take your dough and place it in the bowl. Cover with a warm towel, and let it sit in a warm place for 1 hour.
Cover your sheet pan with parchement paper, and, when the dough has risen, take it out of the bowl and spread it out over the sheet. Place the wet towel on this, and let sit for another 20 minutes. While it's rising, preheat the oven to 400ºF
After it's finisehd rising this time, rub the surface with a good amount of olive oil, and poke it with your fingers. Then sprinkle salt on the surface, and whatever else you think would taste good. (Cheese, rosemary, garlic etc.) Put it in the oven for 20 minutes, and you should have perfect foccacia!
